A recipe was included in last week's CSA basket for Asian Inspired Lettuce Soup. It's really easy and a great way to use up the summer lettuces.
Just heat up a pan of stock, throw in chopped spring onion and bok choy. Let it simmer for a few minutes and then add a head of roughly chopped lettuce (seriously - iceberg lettuce in soup!)
Garnish with fish sauce and sesame oil. If you want a bit of heat, you can also add chili pepper flakes.
Spoon into bowls and away you go.
We tried it the other night, and I'm hooked!
