Comfort Food Mondays

My mother was an amazing cook, as I think I've mentioned.  Once or twice a week, she would get into the kitchen and bake up a huge number of breads and cakes and cookies - all from scratch and all the things that good memories are made of, including this wonderful recipe for "Lazy Daisy Oatmeal Cake", or as we called it, Porridge Cake.

Because it has oatmeal in it, we were allowed to have it for breakfast on days we just couldn't face a bowl of cereal.

Spoiled.  We were spoiled rotten...

Lazy Daisy Oatmeal Cake

1 1/4 cups boiling water

1 cup uncooked oatmeal

1/2 butter

1 cup white sugar

1 cup brown sugar

Combine in a bowl and let stand covered 20 minutes.

Add:

2 eggs

1 1/2 cup flour

1 tsp baking soda

1/2 tsp salt

3/4 tsp cinnamon

1/4 tsp nutmeg

1 tsp vanilla

Mix well and pour into a greased and floured 9" X 13" cake pan.  Bake at 350 degrees for  50 - 60 minutes.

While this is baking, mix together:

1/4 butter

1/2 cup brown sugar

3 Tbsp milk

1/2 cup chopped nuts

3/4 cup dried coconut

Spread over cake as soon as it is done baking and broil until frosting becomes bubbly.
